HDR10 has one set of static meta data for the whole movie.
HDR10+ scene/image dynamic meta data. (each scene/image can have different HDR meta data)
Dolby Vision same as HDR10+, but defined by Dolby.
HLG static HDR meta data for the whole movie which is compatible to SDR but usually not that 'impressive/contrast rich' as HDR10.

So about the options, for Dolby Vision:
'--dolby-vision-profile' sets the Dolby Vision Profile the output should be compatible with, see: https://www.dolby.com/us/en/technologies...levels.pdf (note that only level 5 is currently supported)
'--dolby-vision-rpu' sets the Reference Processing Unit meta data specified.
