I would like to detelecine and deinterlace mixed DVD content. Reviewing the different settings, I’m not sure how to set VFR as well as the proper deinterlace settings. What is recommended?

I would recommend: Not creating vfr content.
Alternatively, you can use TDecimate, create a time code file and use that while muxing.

Hybrid does not support turing cfr into vfr content. (DVD => cfr)
=> Hybrid is not the right tool for the job.
