I'm not sure if my issue was related to the others here but I also was experiencing lots of issues with Hybrid 2025.11.09.1 seemingly hanging when getting to the step of encoding the video with ffmpeg. Logs never showed a problem, and no errors popped up, it just would hang there forever and never progress past that point. I just tried the latest dev version and magically, it's now encoding video properly again. So thanks Selur, whatever you did seemed to solve it for me as well!

Sorry, I spoke too soon. Lost power while encoding the video so had to start over and now it's doing the same thing again, just hanging while trying to encode with FFmpeg.
